You really should have a scanmaster so you could monitor the car/ read codes and values like the TPS they threw at the car.
I dont like the fact that you have no Idea what the shops used for parts. IMHO some replacement parts do not measure up to GM. (The MAF and Coil in your case)
Did they replace the control module when they did the coil ?
